What do you do with hungry men when it’s too cold and nasty outside to grill? Today’s answer is this; a Cowboy Steak and Beans recipe which is a one-pot wonder that will fill up even the heartiest of menfolk!

I started making a similar recipe from Jamie Oliver. I just LOVE almost anything that man makes, and …the accent? Bonus points! It was on his Five Ingredient show, which I binge watched in about three days.  If you’re looking for a good cooking show to watch during this whole Covid 19 craziness, I highly recommend it!


How are my fellows cooks holding up through all of this? I have cooked every day for three weeks with no take-out or restaurant adventures. I am craving a few things like ramen at my favorite place here in OKC called Goro – (you can click here to read about them), and ohhhhhhh sushi.  I may have to resort to making some sushi this week (see how we do it here).

I have been in a strange kind of writer’s-block-funk during this virus stuff. Anyone else? We have been taking on massive projects like renovating our bedroom bath area and completely re-doing our bedroom and also trying to connect with people in the outside world using Zoom or Facetime or even old-fashioned phone calls. The cool thing is, I have connected with friends I haven’t talked to in a long time, like my original OK blogger group, all of whom I loved talking to again! Love you Marie, Kelly, and Rose!

Of course I had to improvise, since I’m NOT limited to five ingredients, and I wanted to punch up the content, add some acidity with the cherry tomatoes, and also add a few other items for even more flavor.

One thing I love is Jamie’s cooking tips, like this one, for seasoning your meat. Instead of salting and peppering the meat, salt and pepper your cutting board and then simply just roll all sides in it. Genius!

Next, get a heavy skillet and add a drizzle of olive oil, and let it get smoking hot, then add in your steak. Today I am using a sirloin from Circle K Angus Farms in Arkansas. They were kind enough to let me try some of their meat and also…

After seasoning my steak, I placed it into my hot pan and seared it on all sides, about 2-3 minutes per side to give it a nice crust.

Then removed it to a plate.

Add in your herbs and saute them just for about 10 seconds then remove with a slotted spoon.  We’ll add those back in later.

Toss in your mushrooms, onions and poblanos into the pan (add a little more oil if you need to) and saute until they all begin to soften and the mushrooms get glossy and are browning.  Add in the chopped garlic and stir for about a minute then dump in your beans (do NOT drain them).  The canned bean juice is going to mix with the flavors of the mushroom and get a nice brown gravy like color and also be kissed with all those aromatics like the peppers, onion and garlic.

Continue to cook until the sauce thickens up somewhat, and then add in your cherry or grape tomatoes and cook a few minutes more.

Add in your crispy herbs and stir. Taste for seasoning and add salt and pepper to your liking.

Then add your steak back into the pan.

DON’T forget to pour any steak juice that has accumulated on the plate! It’s GOLD!

Serve this up piping hot with a crusty loaf of bread, some coleslaw or a salad and dinner is done!

Ingredients
  • Steak, your favorite cut, (ideally 1½-2 inches thick) - make 2 for 4 people
  • 1 medium onion, chopped
  • ½ medium poblano pepper, chopped
  • 4 sprigs of fresh rosemary
  • 2-3 small sprigs of thyme
  • 4 cloves of garlic
  • 8 oz. package sliced cremini mushrooms
  • 2 14 oz. cans navy or great Northern beans, NOT drained
  • 10-12 cherry or grape tomatoes, halved
  • Salt and Pepper to taste
Instructions
  1. Preheat an iron skillet or other heavy bottomed skillet over medium high heat
  2. Salt and pepper your cutting board kind of heavily and evenly then roll steak around to season -making sure to season sides as well
  3. Sear steak in pan on all sides about 2-3 minutes per side until brown crust forms and steak is cooked to your liking, then remove steak to plate and tent with foil
  4. Add a tiny bit more olive oil if needed and pull the leaves off the rosemary and thyme and add to pan, stirring about 10 seconds just to flavor the oil and crisp the herbs. Remove them to the platter with the steak
  5. Add in onion, poblano, and mushrooms and stir in pan frequently until mushrooms begin to brown and get glossy and the onions and peppers soften
  6. Add in garlic and stir for about 30 seconds then add in beans, juice and all
  7. Stir to thicken, until the sauce becomes brown and thick like gravy
  8. Taste and salt and pepper to taste
  9. Add crispy herbs back in and stir
  10. Add in steak and juice from steak plate along with the juice and serve hot!
