Triple Cinnamon Snickerdoodle Bars

I need to confess something.

Something along the lines of – I don’t have a lot of patience.


I am not a fan of doing long tedious, stand- by- the- stove- or -oven -and- watch kinds of things.  Remember my grilling story?  Things that I have to stand around and watch carefully tend to become burnt offerings.

I tell you that, in humiliation, to also tell you something else.

I turn every form of cookie into a bar.  Get it?

One pan.  One timer setting.  No standing around and waiting, shoveling cookies off the pan, and refilling the pan with scoops of gooey dough.

The latest of my recipes to convert into pan cookies is snickerdoodles.  And after making them, you will never want to make ordinary snickerdoodles again.

Begin by preheating your oven to 350º and greasing a 9 X 13 pan.

Start with 2 2/3 cups of flour.  Pour it into a mixing bowl.

Add 2 teaspoons baking powder and a teaspoon of salt.

Add 1 1/2 teaspoons of cinnamon.

Take a whisk and give your dry ingredients a good fluff.

With your mixer, cream together a cup of butter, and 2 cups of brown sugar until they’re light and fluffy and happy.

Add in 2 eggs and 1 tablespoon of vanilla extract.

Mix until well blended.  Slowly add the flour mixture.

Don’t over-blend.  Just mix until it all seems evenly blended.  Then get these lovelies.

Cinnamon baking chips – like chocolate chips, only cinnamon.  Whoever came up with this idea was a genius….pure genius!  If you don’t know where to find them in  your area…go here.

Dump in the entire bag.

Just trust me….okay? Thank you.

Mix until the cinnamon chips are well incorporated.  Then turn out into your greased 9 x 13 pan.

Butter your hands or spray with cooking spray and pat your dough evenly into all corners of the pan.

Take 3 tablespoons of sugar and 3 teaspoons of cinnamon and mix them well in a small bowl.

Lightly sprinkle the cinnamon sugar mixture over top of all the dough in  your pan.

Congratulations! Your pan is ready for the oven! You made it!  Time to relax!  There is no waiting around for 7 minutes to put in another batch.  Go do whatever you can for 25 minutes. Take a nap, walk your dog, go ahead and exercise, as you’ll need to after you eat half a pan of these marvels.

Bake for about 25-30 minutes, stopping at halfway point to rotate your pan.

At this point, your kitchen will smell like you died and went to cinnamon heaven.

The cookies will come out and you will stare longingly at them…

But you are dreaming of that cinnamony-sugary topping over that warm melty gooey snickerdoodle bar.  You can imagine the crunch of the topping and the moist, melt of the cinnamon chips in your mouth…

You’re gone..just do it.

Ingredients
  • 2⅔ c. flour
  • 2 t. baking powder
  • 1 t. salt
  • 1½ t. cinnamon
  • 1 c. butter
  • 2 c. brown sugar
  • 2 eggs
  • 1 t. pure vanilla extract
  • 1 10 oz. bag Hershey's Cinnamon Chips
  • 3 T. sugar
  • 3 t. cinnamon
Instructions
  1. Preheat oven to 350º.
  2. In mixing bowl, sift together flour, baking powder, and salt (if you're in a hurry, just fluff it with a whisk).
  3. In your electric mixer bowl, beat together butter and sugar until light and fluffy.Add eggs one at a time, then vanilla, mixing well after each.
  4. Slowly add the flour mixture, one cup at a time until all is incorporated.
  5. Turn mixer to low and add cinnamon baking chips.
  6. Spread in a greased or sprayed 9 x 13 pan.
  7. Mix together sugar and cinnamon and sprinkle evenly over top of cookies.
  8. Bake for 25-30 minutes or until set.
