The Tasting Room and Dorie Greenspan

That’s James Beard award winner Dorie Greenspan and I adore her. She is the author of several cookbooks, specializing in french cooking, including this one, which is her latest…
And this one, which every baking addict knows about.

Last night, due to her long standing friendship with John Bennett, an Oklahoma City chef legend who actually has past ties to Julia Child and James Beard, several of us Okies got to dine with Dorie.
John is responsible for bringing Dorie to her first Oklahoma stop at The Tasting Room. Also in attendance…”The Singing Chef” Bob Dickson who serenaded us a couple times during the evening.
What is The Tasting Room, you ask?
The Tasting Room at Will Rogers Theatre is the baby of Western Concepts and it is an amazing room with beautiful ambience, and an enviable kitchen at one end. It is available for public or private receptions.
It also has french doors opening up to a gorgeous patio with more tables.
Oklahoma Chefs Kurt Fleischefresser, the Executive Chef from Western Concepts and David Henry, head chef at the Lobby Bar operate and cook at most events. Tonight, David Henry whipped up several of the appetizers out of Dorie’s newest book “Around My French Table”. And we, the diners, were the lucky taste testers.
We got to sample things like Salmon with Basil Tapenade, Celery-Celery Soup, Salmon Rillets, and Matafan (little potato pancakes).
There was also Pissaladiere, Garlicky Crumb-Coated Broccoli and some amazing Sugar-Crusted French Toast (that I can’t get out of my mind).
The first two things I’m making out of Dorie’s cookbook are the french toast and this Beef Cheek Daube.
If anyone in Oklahoma City knows where to get beef cheek, please leave me a comment because this was fabulous. Kamps maybe?
The Pissaladiere (do not ask me how to pronounce that) was a flatbread with carmelized onions, criss-crossed anchovies and olives (foodies actually like anchovies).
Nichole, Vivian and Molly and I are all Dorie Greenspan fans, and we had the pleasure of chatting with Dorie and her husband Michael for quite awhile that evening. Can I just say that these are two of the sweetest people on the planet? Real and a fresh breath of air, I tell you.
We also had the pleasure of yakking with this guy…Chef Kurt Fleishfresser of Western Concepts and The Coach House. Kurt is as nice a guy as he an incredible chef.
Chef Kurt did a perfect job of embarrassing the life out of Dorie.
He did so by honoring her with a plaque from our Governor Henry proclaiming October 25th as Dorie Greenspan day in Oklahoma.
