Thanksgiving Organization List

Last night I sat down and wrote out our menu for Thanksgiving in list form.  This helps Mr. Wonderful and I man the oven and stove organization times to keep things moving smoothly.

At our house, each kid not only gets to pick a dish they love but they also have to make it, which is great for them to learn and perfect our old family recipes to take with them when they cook for their own family someday.  However, this can lead to mass chaos and broken dishes in the kitchen if there is not some organization.


We had to come up with a way to manage things…so Mr. Wonderful started instigating this and here is what I (we) do.

I wrote out my menu first.

THANKGSGIVING LIST for 7 P.M. Dinner

MENU

Turkey 
Gravy 
Mashed Potatoes 
Herbed Cornbread Stuffing 
Bacon Mushroom Walnut Cornbread Stuffing 
Poblano Spoonbread 
Good as Dessert Sweet Potatoes 
Green Bean Casserole 
Green Beans Almondine 
Brussels Sprouts with Bacon and Onion
Roasted Root Vegetables 
Roasted Butternut Squash Salad with Cider Vinaigrette
Sweet Potato Biscuits 
Pumpkin Crisp
Pecan Pie
Pumpkin Cheesecake 
Candy Corn Popcorn Balls
Pumpkin Cookies
Fall Puppy Chow

At this point, I curled up in a ball at the task in front of me and sucked my thumb.

Then I got back up and started breaking down the tasks by time frames.

COOKING TIMES

Turkey 3 ½ -4 hours Oven
Gravy 10 minutes -Stovetop
Mashed Potatoes – 1 hour – Stovetop
Herbed Cornbread Stuffing – plain – 30 minutes Oven
Bacon Mushroom Walnut Cornbread Stuffing -45 minutes – oven
Poblano Spoonbread 30-40 minutes
Good as Dessert Sweet Potatoes -45 minutes Oven
Green Bean Casserole – 30 minutes-Oven
Green Beans Almondine – 15 minutes – stovetop
Brussels Sprouts with Bacon and Onion – 20 minutes -Stovetop
Roasted Root Vegetables -45 minutes – oven
Roasted Butternut Squash Salad with Cider Vinaigrette 
Sweet Potato Biscuits -20 minutes -Oven
Pumpkin Crisp
Pecan Pie
Pumpkin Cheesecake – Lyndsay
Candy Corn Popcorn Balls
Pumpkin Cookies
Fall Puppy Chow

Then I poured myself a good stiff drink and gave up.

Just kidding…I really didn’t.

Then I started organizing by writing down times that things need to go into the oven or start on the stove.

Then I decided I need to make some of the stuff one or two days before, because my double ovens and 4 burner stovetop weren’t going to cut the mustard.

Did you know that phrase refers to the Old English craft of making mustard?  The mustard was made in big giant barrels and developed a crust on top which then had to cut with a scythe. The scythe had to be continually sharpened to do this job or else…you guessed it..it wouldn’t “cut the mustard”!

Aren’t you glad you learn so many cutting (pun intended) edge facts from Dishin & Dishes?

P.S.  I have seen that crust form around a French’s spout top of mustard in our refrigerator…from messy kids who put the bottle away unwashed!

P.S. It makes me want to find that kid and give them a noogie when I have to try and clean it later.

I digress.

TWO DAYS BEFORE:

Make Pumpkin Cookies
Roast Sweet Potatoes for Sweet Potato Biscuits & Side dish
Make Good as Dessert Sweet Potatoes – don’t bake
Make Puree for Sweet Potato Biscuits
 
 
DAY BEFORE:
Make Sweet Potato Crisp
Make Pecan Pie
Make Popcorn balls
Make Fall Puppy Chow
Brine Turkey
Make Stuffings – don’t bake
Make Cinnamon Rolls for morning
Lay out serving dishes and table settings & tablecloths and napkins
Roast butternut squash for salad
Make Vinaigrette for salad

DAY OF:

10 a.m. Start Mulled Cider in the Crockpot
3:30 pm. –Turkey
4:00 Make Fresh cranberry relish
Make whipped cream
5:00 bring premade dishes to room temperature
5:30 peel potatoes and boil
5:30 peel and dress vegetables for Roasted Root Vegetables
6:15 Put in Bacon Mushroom Walnut Stuffing
6:15 Start Green Beans Almondine on Stovetop
6:15 Put in Poblano Spoonbread
6:15 Put in Good as Dessert Sweet Potatoes
6:15 Put Roasted Root Vegetables in oven
6:30 Start Brussels Sprouts on stovetop
6:30 Remove turkey to rest – gather drippings for gravy

6:30 Put in plain stuffing
6:30 Put in Green Bean Casserole
6:40 Put in Sweet Potato Biscuits
6:45 Make Gravy on stovetop
6:45 Remove potatoes and drain to mash
6:45 Toss salad and dress

Does it exhaust you just to read this?

While you might think this silly and anal, it really helps, I promise you.

Now I can look at my list and see that I’m going to be major jammed up at 6:15 because I have four oven racks and I need to put in 5 pans of food.

That my friends, is when I turn to Mr. Wonderful.

Except he’s probably going to tell me I’m making way too much food and to cut out a dish. In which case, I’ll go buy a toaster oven.

The point being, this helps you avoid a big hassle and mess and migraine the day of Thanksgiving in trying to figure out how or when to do it all.

It also lets you know if you’re loony tunes and making too much food for your ovens.

Which apparently I am…so back to the drawing board!

I forgot to add one more thing to my list.

9 p.m. Sit by the fire, put my feet up and go to sleep. Thank you very much!
