Spring Vegetables -What’s in Season Now

Happy Spring!  Do you know what vegetables are in season now?  I love too cook with what’s in season, hit the local farmer’s market and try to make something out of it!  Also, when produce is in season it tends to go on sale, so it helps your pocketbook as well!

Maybe you just want some good ideas? Let me offer up a few.  Here are two spring vegetables now in season along with some tips and recipes on how to fix them!


Beets –Beets or beetroot are actually the root end of the plant and these deep red jewels can also come in golden form or even candy striped and contain a punch of antioxidants and nutrients being linked to helping heart health.  If you’re like me and have typically associated beets with the pickled can or your Grandma, try roasting fresh beets…it’s a revelation!  Bonus tip….if you are a greens lover, try washing, chopping and sauteeing the tops and leaves in some olive oil and garlic.  It’s delicious!  Here are a few beet recipes to get you going!

Asparagus –Once thought of as belonging to the lily family, asparagus has many health benefits as well and is made up of 93% water. This makes it a very tasty, nutrient packed addition to many lowfat diets.
