Smashed Potatoes
You’ve had them.
Red potatoes, skin still on. Coarsely mashed with all kinds of wonderous goodness. Cheese, bacon, butter, sour cream. Seasoned to perfection. The perfect side dish at your favorite local steak joint.

They’re pretty easy to make. Try this.
Take a 5 pound bag of red potatoes. Bring a large pot of salted water to a boil.
Put a lid on your pot and boil these babies about 30 minutes or until you can stick a fork into them easily. Drain them in a colander.
Throw them in a large bowl.
Now for the good stuff.
Add in one stick of butter (softened), one 16 oz. container of sour cream, two cups of shredded cheddar cheese, and 2 chopped green onions.
Now add one cup of milk, one entire package of real bacon bits, one tablespoon of salt and one teaspoon of pepper.
Take your potato masher tool and coarsely mash this all together.
Spoon it all into your favorite baking dish.
At this point, you can bake it for 20 minutes at 350 degrees or refrigerate it for a future meal. I’m going to heat this up tomorrow for Christmas dinner. I’ll take it out tomorrow, let it come to room temperature. then pop it in the oven about 20 minutes before dinner.
Right now though, they taste just great. Not that I’m tasting…
Okay, maybe I tasted.
