Pasta Fagioli Soup

Here is the recipe I made while guest chef’ing (disclaimer, I am NOT a chef!) for the Gateway Garden Home Tour.  Since I made it for 200+ people, I won’t confuse you with the step by step photos of the the ridiculous quantities of food I used.  It was quite like The Flintones cooking in a giant pot with those extra large dinosaur bones…


I will tell you tho, that you make this very much inexpensively by soaking and cooking dried beans instead of using canned and doubling this recipe.  Or multiplying it by 5 or so like I did to feed hundreds!

Pasta Fagioli soup.

Healthy, hearty, rich and filling, this soup is great with a salad, a loaf of crusty bread to dip in it, or my Bruschetta recipe.

I chopped the vegetables very tiny and it helped create a wonderful flavor in the beefy tomato broth based soup.  The printable recipe is below!
