Herb and ancho glazed carrots

  • 2 lbs. whole carrots
  • 3 cloves whole garlic
  • 3 T butter
  • 1 T. brown sugar
  • 2 T. honey
  • ½ t. thyme leaves
  • ¼ t. ancho chile powder
  • ½ t. salt or to taste
  • ¼ t. black pepper
  1. Peel carrots and cut into chunks
  2. Leave garlic cloves whole or you can cut in half
  3. Put carrots into pot and barely cover with water
  4. Simmer 10-12 minutes until fork inserts easily but remain slightly firm
  5. Drain into colander, toss in garlic with the carrots and put pot back on stove
  6. Add butter, brown sugar and honey to pot over medium-low heat and add all spices
  7. Stir just until butter melts and all spices are mixed in well.
  8. Add carrots and garlic and cook stirring often until glaze becomes syrupy on the carrots about 5 more minutes
  9. Serve hot!
