Ingredients
  • 3 lbs. russet potatoes
  • 2 T. salt, divided
  • 8 oz. cream cheese
  • ¼ c. butter
  • 1½ c. shredded sharp cheese, divided
  • ½ c. parmesan cheese, grated
  • 1 (2 oz.) jar pimento, chopped
  • 4 green onions, white and green parts chopped
  • ¼ c. milk
  • 1 t. pepper
Instructions
  1. Add one tablespoon of salt to large kettle of water and bring water to a boil.Cut potatoes into large chunks and add to water. Boil 20 minutes, covered or until fork goes easily into chunks. Drain potatoes and add to large mixing bowl. Add all ingredients except for ½ cup of shredded cheddar. Mix well and spread into greased or sprayed 9 x 13 baking dish. Top with remaining ½ cup of cheddar. Bake 20-30 minutes until potatoes are heated through and cheese on top melts.
