Bacon Braised Cabbage

Hey you all!  It’s been awhile since I’ve posted a recipe! Life has been a little crazy in our family of late and sometimes you just have to choose to slow down and put things aside for the more important of things – relationships.

Since Mr. Wonderful and I have empty nested, we eat rather randomly at times at night..often opting for warmed up leftovers of something or other. I haven’t quite got the knack of only cooking for two since we used to cook for scads of kids.


Some nights I just get a craving and perhaps it was my German roots calling, but the other night I decided to braise a giant pot of cabbage and my supper that night consisted of a bowl of this deliciousness all by itself. Mr. Wonderful took leftovers several times to work that week and his coworkers commented about how wonderful it smelled when he heated it up in his break room.

Memories come back to me of similar dishes my grandparents and aunts made that we devoured at family gatherings. While other kids were eating burgers and fries, I was falling in love with cabbage!

It truly is one of those delicious one pot bowl of comfort food wonders that is fantastic on a cool night. I hope you’ll try it!

Bacon Braised Cabbage

  • 6 pieces bacon
  • 1 head green cabbage
  • 2 medium onions
  • 2 cloves garlic
  • 1/2 c. chicken stock
  • 2 T. apple cider vinegar
  • 1 t. salt
  • 1/2 t. pepper
  • Stack bacon and slice into small pieces
  • Add to large heavy bottomed pot and cook until crisp, about 5-7 minutes stirring constantly over medium heat
  • Remove bacon with slotted spoon leaving hot bacon grease in pan
  • Chop onions
  • Core and chop cabbage into bite-size pieces
  • Peel and mince garlic cloves
  • When bacon is almost crisp add onion and saute about 3 minutes
  • Add in garlic and saute 1 minute
  • Add in cabbage and season with salt and pepper mixing well
  • Add vinegar, stir and cook to reduce a minute or two then add chicken stock and continue to cook, covered about 20 minutes, stirring every five minutes until cabbage is very tender
  • Add bacon back in, toss and serve warm
