Berry Pie Tarts, a Treat from Mr. Wonderful

One of the many reasons I love my husband….
Look at what the man “whipped up” using the leftover scraps of crust we had after making our Savory Tomato, Roasted Garlic and Mozzerella Tarts.
I was preparing the patio table for us to eat on (translation in Oklahoman – I was out wiping the 1/2 -inch layer of dirt off the glass-top table from our horrible winds) and I wondered where he was.
Peeking back inside the house, this was what I found.
(Sweetheart – please look closely at your picture and notice the white flour all over your shirt. It’ll drive your clean-freak- self crazy!)
He had smooshed together the remaining dough scraps, rolled them back out, and cut a couple of pieces from them. Then he filled them with berries mixed with sugar. He then folded the crust over the berries and pinched the edges shut. He proceeded to brush them with melted butter and sprinkled them with cinnamon sugar. At this point I loved him….
I realllllly, really loved him.
He popped them into the oven while we were eating these….
As I recall, it was a beautiful evening on our patio. The lilies were in bloom as were the roses.
Ahhh…it’s hard to remember due to the sweltering 103 degree days we’ve had for the past week. The flowers are crisping and begging for mercy. The roses have crawled back inside themselves trying to escape.
But this night, with Berry Pie Tarts, we were happy.
and cooler….
So, if you’re ever left with some pie crust scraps, don’t throw them away!
