We used to have a restaurant here on Lake Hefner that was island themed. When it disappeared, I was beyond sad…I loved their food – cuban bread, fried plantains, and all the rest of their tropical themed cuisine.
Last night, Mr. Wonderful and I spent a night on the patio. We had planned on grilling fish to go with this salsa, but didn’t want to de-thaw or make a store run, so we opted for chicken instead. I sprinkled the chicken with a jerk rub and for some coolness for our tongues, we made this Tropical Salsa. As a side dish, we made Coconut Basil Rice in our rice maker with coconut milk instead of water, and at the last minute chopped up some fresh basil to mix in.
I used cilantro and a new herb I am growing this season called Pineapple Sage. When you rub it’s leaves, it smells like a fresh pineapple so I thought it’d be yummy in this. If you can’t find it, it’d be fine without.
