Even though I try to push local restaurants to my kids often, they still truly love to visit Chili’s. And there is one thing at Chili’s that really makes em’ smile. That one thing would be chips and salsa and most of all….Skillet Queso.
Needless to say, I’ve had my fair share of Chili’s skillet queso brought out in a hot black iron skillet, and therefore figured that I could make it at home. Yes, its true, I am not above making my children think I’m a hero by making a bubbling pan of cheesy goo.
Also, it’s Superbowl week and I just need to clarify one thing. During Superbowl week, gourmet food can completely go out the window. All things are allowed…things like cream cheese, Frank’s hot sauce and ….yes, even Velveeta Cheese. There is a time and place for processed orange cheese, and the Superbowl is most certainly that time.
So get busy and cube up one entire 32 ounce package of Velveeta Cheese. Dump one and one-half cups of milk into a skillet.
Add in all that glorious cheese, whatever it might be made of….
Also add in some spices. We’re going to add one full tablespoon of chili powder, 1 teaspoon of coriander, 1/2 teaspoon of cumin, 1/4 teaspoon cayenne pepper, and 1/2 teaspoon of garlic powder.
And also add in two cans of this stuff.
If you can find the “hot” version, I dare you to try it…I love it.
Scrape this right into the cheese and milk and spices.
Squeeze in the juice of one lime.
Then mix this all together over medium heat until it just begins to bubble.
Turn down the heat to low and continue to mix it together until it smooths out.
Serve it up right away with some tortilla chips.
(It it gets too thick, add a little more milk in to thin it out!)
Also, you can serve it right out of the skillet, but I would probably transfer it into a crock pot for a party to keep it warm!
It’s Superbowl worthy. Try it Sunday and just SEE for yourself!
- 1 (32 oz.) package Velveeta Cheese
- 1½ c. milk
- 1 T. chili powder
- 1 t. coriander, ground
- ½ t. cumin
- ½ t. garlic powder
- ¼ t. Cayenne pepper
- 2 cans Wolf Brand chili, no beans
- 1 medium lime, juiced
- Add milk to skillet, then add all ingredients. Place on stove over medium heat and bring to bubble, then reduce heat to low and stir. Serve right away with tortilla chips.
- **If keeping out for extended period of time, put in a crockpot to keep warm.
