Sunday Potluck Fav -Lemon Ice Box Pie!

Today over at Testify, we have a linked up challenge and today’s challenge is..

Please share your favorite potluck recipe.  It could be a casserole, salad or even a dessert.  You may not have taken it to a potluck event but think it would be a good recipe to take to one.  Any recipe will do.

Lemon Ice Box Pie.

The kids great grandma used to make this all the time and I, a lover of all things lemon still adore it.

It’s simple really.  Just get a read- made or make a homemade graham cracker crust.

If you’re interested in how to make your own graham cracker crust, I’ll post a how-to tomorrow.

In a mixing bowl, dump in 2 cans of sweetened condensed milk.

Squeeze 5 or 6 lemons (whichever make one full cup) of lemon juice.  Mamoo used frozen lemonade concentrate but for the life of me I couldn’t find that recipe and I always think fresh is best!)

Note that I am using tongs to squeeze my lemons due to Lance breaking my lemon juicer in this debaucle.

Also zest up one of the lemons right over top.

The zest equals roughly about one tablespoon.

And zest just adds SUCH a punch of lemon flavor!

Pour the juice into the sweetened condensed milk.

And mix it all up with a whisk.

Mix up 8 egg yolks with your mixer until they turn a softer yellow and get a little fluffy.

Dump in your condensed milk/lemon mixture.

And mix it all up again for about a minute.

Then pour it into your pie crust.

And bake it for 20 minutes at 350º.  Put it in the “icebox” or what southerners used to call their refrigerator in olden days.  (Hence the name!)

Now of course at potlucks, there was always Cool Whip…but you can make your own homemade whipped cream.  Just for fun toss in a bit of lemon zest into that too!   Need a tutorial? Click here!

    Hominy Caserole 4 cans yellow hominy, drained 1 can chopped green chilis 1-8 oz. jar cheeze whiz 1-8 oz. container sour cream mix all together in a baking dish and bake at 350 degrees until golden brown, about 30-45 minutes. Note: I have used hominy with red pimentos for color, any cheese in a jar, some with peppers in it already, also sour cream based dips-french onion, green onion or what I have available. This is loved by all that will try it. My husband doesn't like hominy in general so has never tried it. Doesn't know what he is has missed in the 20+ years I have been making it and taking it. Have several that request it at every holiday or family gathering. I usually make it with 8-12 cans hominy and adjusting accordingly.

    Katie - in the "north" we call this the "George Washington Cherry Cheesecake" and make it once a year around President's Day :) Also, it is served with cherries on top! Yummmm! Great recipe :)

      Di - Oh I bet it would be good with blueberry, raspberry or strawberry on top as well! Never heard of George Washington Cherry Cheesecake! Yum!
