Okay, here’s a simple, yummy recipe that has nothing to do with Thanksgiving food. Cuz frankly, I have had it with Thanksgiving food. How about you?
They come in a pressed type brick similar to ramen noodles, except ramen noodles are fried and have virtually no nutritional value. Soba noodles are usually made of out buckwheat or wheat flour and are a web of intertwined crunchy goodness. Cook them in minutes to create noodle dishes or a fun cold noodle salad with way more nutrition than ramen.
I’d been reading about Soba noodles and how good their wheat-nutrition grain is for you, but hadn’t found any yet. I’ve read that most grocery stores carry them.
Not in the mid-southwest they don’t.
But we do have plenty of BBQ Pork Rinds and Pimento Cheese.
Even at my asian market, which is fantastic, I had to hunt.
So lemme tell you, you can do this with wheat fettuccine, or better yet, spaghetti, if you can’t find soba noodles.
So here we go ladies and gentlemen.
Wait, do gentlemen read food blogs? If so, I’d love to hear from one, cuz I’m guessing not?
Take one 8 ounce package of soba noodles. Put it in a big pot of boiling water. Simmer your noodles according to the time on the package. Then drain em’.
Decide whether you want a cold noodle salad, or a warm creamy one. Today, I chose cold, so I rinsed them in a colander to cool them off. You may want warm though.
Both are delicious!
In another medium-size bowl, mix together 3/4 c. peanut butter, 1/4 c. rice wine vinegar, 1/4 cup brown sugar, 2 cloves of minced garlic, 1 tablespoon sesame oil, a pinch of red pepper flakes, and 1 teaspoon freshly grated ginger. Whisk it together and make it smooth. Then, slowly drizzle in 1/8 cup of olive oil
Do as I say, not as I do.
You can always use chunky peanut butter, if you prefer some texture in your sauce. That’d be super good.
Now, if you’re going for warm sauce, pop it into the microwave for about 2-3 minutes to warm it. You don’t want to heat it really hot, just warm.
If cold, just leave it be.
Pour your incredibly delicious sauce over your noodles.
Repeat after me…patience is a virtue.
Take some tongs and really stir the noodles and sauce well.
Make sure your noodles are thoroughly coated in the ooey gooey peanut sauce.
Something’s just not right. We need some color and something that will just kick up the flavor.
Chop up 1/4 cup of cilantro and 3 green onions. Sprinkle them over the top. Some sesame seeds would be great too if you want to sprinkle them over the top. Doggone it, that would have been good!
I hate it when I have after thoughts too late. Do you ever do that? Someone is incredibly rude to you and later, after the fact, you think of these awesome come-backs…
But way too late.
Hmph. I hate that.
Where were we? Sprinkling cilantro and green onions…
This is such a wonderful side dish or the perfect girl’s lunch when you’re home alone and have no men-folk to feed meat to.
However, if you like, make it a meal. Add thinly slice red peppers, red onions and some grilled chicken. Toss in some brocolli florets and julienned carrots.
It’s a long way from turkey and dressing.
And we all need that right now.
- one 8 oz package of Soba Noodles (or wheat or white pasta of your choice)
- ¾ c. peanut butter
- ¼ c. rice wine vinegar
- 2 T. brown sugar
- 2 cloves garlic, minced fine
- 1 T. sesame oil
- pinch of chili flakes
- 1 t. grated fresh ginger
- ⅛ c. olive oil (Just use ½ of your ¼ cup if you don’t have one)
- Cook soba noodles according to package directions. Drain.
- If chilled salad is preferred, drain and rinse under cold water. If hot, simply drain. Mix next 7 ingredients together in bowl with whisk until well blended and creamy. Drizzle olive oil and whisk until desired thickness. (I use all).
- Pour sauce over noodles.
- Sauce can be heated in microwave for about 60 seconds if warm noodles are preferred.
- It’s delicious both ways!
- Add any chopped veggie of your choice and chicken for a great healthy meal!
