This is a sort of peppermint bark, sort of peppermint fudge cross of a recipe. I have long loved the white chocolate peppermint bark at Christmas time so it’s just a given that I love this as well. It’s pretty popular at Christmas gatherings and you probably won’t get any leftovers to take home so beware! Put some aside for yourself before taking it to a party!
And the best part? It’s easy. So easy! It’s one of those things you can make real quick and chill and forget about. My kind of treat!
This is one of those things that comes together very quickly, so make sure you have everything out and ready to go…have your pan lined beforehand so you can quickly scraped the mixture into it before it gets to thick. Line a square pan with parchment paper or foil. You can lightly spray it if you like, but it’s really not necessary (I don’t like the greasy look on the fudge afterward).
Take about candy canes and toss them into your food processor. Pulse just until they are crushed up into small bits (but not powder!).
I had a hard time doing that and next time I would probably just put them in a gallon freezer bag and bash them with my rolling pin.
Which is just what I did to get some of those big pieced broken up anyway.
Save yourself a lot of time peeling candy cane wrappers if you can find these…
But alas, I couldn’t find them.
Now take a medium size sauce pan and add in a can of sweetened condensed milk (14 oz.).
Add in two entire bag of white chocolate chips.
Turn your stove on medium low heat and stir just until the chips are almost melted. Remove from the heat and keep stirring until smooth.
Add in a teaspoon of peppermint extract and 1/2 cup of the crushed candy canes.
Mix it all up really good.
Spread it into the bottom of your lined pan.
Take a bottle of red food coloring and drop a drop or two into the fudge. Take a knife and swirl it throughout the pan. Add as much as you want for the look you want. I think I ended up using about 4 drops.
Sprinkle the remaining 1/2 cup of peppermint candies over top of the fudge.
Cover and place into your refrigerator for about 2 hours.
After two hours take out your pan and grasp your foil or parchment and carefully pull out the set fudge. You can kind of peel the foil right off of it.
Slice into six rows going each way. I find it easiest to cut it in half. Then take each half and cut 3 rows. Repeat on the other half. Then rotate your cutting board or the fudge 90º and do the exact same thing. Cut the rows in half, and half again.
Pencil in “go to the gym every day this week” onto your calendar.
