Crunchy Baked Chicken – The Dish That Made Mr. Wonderful Put Away the Cheetos

This Crunchy Baked Chicken recipe is the bomb! When I made it last week, Mr. Wonderful pronounced loudly that he would eat this at least once a week. For you see, Mr. Wonderful has a “crunch addiction”. True story – the man will bring Cheetos to the table for all three meals of the day, including breakfast.

I felt really, really, successful when he didn’t bother to bring the orange dusted crunchy little buggers to the table during this meal.  Dipped first in a healthy honey mustard sauce made using Greek yogurt then in crunchy wonder flakes, you will never miss fried oil in this recipe!


This chicken made the Wonderful guy PUT AWAY THE CHEETOS!

It’s healthy, it’s yummy and it has a wonderful “crunch factor”. And best of all it’s EASY.

Start by drying off 4 chicken breasts between two paper towels.

Grab a flat container with sides or a medium bowl and dump in 2/3 c. Greek yogurt, 2 T. honey, 2 T. Dijon mustard, 1/4 t. each of white vinegar and salt, a tablespoon of chopped rosemary (or 1/2 t. dry) and a pinch of pepper. Whisk this all together really well.  ***Note:  If you intend to use some of this as sauce, double the recipe or remove 1/2 cup or so before dipping chicken into it and add it to another bowl. I’d hate for you to get Salmonella ya know.

Now in another dish or bowl, take two cups of corn flakes, grab a handful, and squeeze your hand around them smashing them. Drop them into the bowl and get another handful and do the same thing and keep going until you’ve crushed all two cups!  Flatten them out a bit with your fingers.

Stick a chicken breast with a fork and dip it into the yogurt coating both sides well with the mixture.

Then place it on top of the corn flakes in the other bowl.

Flip it over and get the other side.

If need be, sprinkle some corn flakes on the open areas that might not have enough coating.

And pat them firmly with your hands.

P.S. I don’t have manly hands, those are my sous chef Mr. Wonderful’s digits.  Anyone remember the episode of Jerry Seinfeld dating the gorgeous blonde gal with manly hands?

Then place them on a lined and sprayed baking sheet.

Repeat with the other three chicken breasts.

Then pop them into a 425º oven on the top rack for about 30 minutes or until you can stick a meat thermometer in them and they read at 165º.

When they come out, the inside is juicy and wonderful and the outside is crunchy and even MORE wonderful.

Serve with a dollop of the healthy dipping sauce.

Ingredients
  • 4 chicken breasts
  • ⅔ c. Greek yogurt
  • ¼ c. honey
  • 2 T. Dijon mustard
  • ¼ t. white vinegar
  • 1 T. chopped rosemary
  • ¼ t. salt
  • pinch of pepper
  • 2 c. corn flake cereal
Instructions
  1. Preheat oven to 425º.
  2. Pat chicken dry with paper towels.
  3. Mix yogurt, honey, mustard, rosemary, salt and pepper together in medium bowl.
  4. Crush cornflakes between your fingers in your hand in another medium bowl.
  5. Dip each chicken breast, coating both sides in yogurt mixture then in cornflakes to completely coat.
  6. Place on lined sprayed baking sheet.
  7. Bake on top rack of oven for 30 minute or until chicken reaches internal temperature of 165.

    Katie, this looks so delicious! I know exactly what you mean about the crunch addiction. In our family it's chips but not necessarily for all three meals! :) Definitely going to try this. Thanks so much!
