Cheese With a LOT Less Guilt

It’s been awhile since I posted about my Healthy Food Section.  Due to a broken toe, I’ve not been able to walk or run of late, but I’ve still been trying to cook healthy…okay… most of the time.

I love cheese.

Plain and simple.  I just love cheese.  My sis-in-law detests cheese and I envy her.

 One of my favorite places in Oklahoma City has a cheese counter that I could pitch a tent in front of and camp there for weeks sampling the many varieties.

The problem with cheese is, that if you’re trying to eat a lower fat, lower calorie lifestyle, one measly ounce of cheese can contain (on the average) 8-9 grams of fat per ONE ounce serving.  

I can’t tell you how unhappy that makes me.

But this little gem has given me new hope.

Laughing Cow Light Swiss Cheese.

It’s great spread on whole grain toast with some Raspberry All Fruit jam for breakfast..

It’s great on multi-grain low-fat crackers with a little chicken salad on top (made with light mayo!).

It’s also yummy to put on your sandwich instead of dressing or mayo for an added little treat.  It comes in other flavors as well, like Light Garlic and Herb, or Light Blue Cheese.

With only 35 calories per wedge and 2 fat grams…

I’m saved!
