Espresso Truffles

I wrote this last year. We’d had three days of snow and ice in Oklahoma City. There’s only so much TV and internet to absorb before I was going absolutely gaga stir- crazy.

Luckily, I had visited one of my favorite baking shops (Sweet Cherry’s Bakery )on Monday before the snow hit and picked up some supplies to make truffles. Valentine’s Day is approaching so I thought I’d knock some chocolates out ahead of time!

Does any time say it better than Christmas?

There is this little local bakery here that makes a thumbprint similar to this one. Sometimes I stop in just to nab one…or four. They are a one bite treat that just makes your day. And they are super cute for your Christmas cookie platter for kids – young and old.

Cream Cheese-N-Spice Frosted Pumpkin Cookies

There is a local sub shop that has an amazing glass pastry case at the counter here in Oklahoma City. My favorite cookie there is their Pumpkin Cream Cheese Iced cookie. I order my low-fat sub on multi-grain bread as I stare longingly through the glass case at them. Usually, before I leave, I end up getting one.

So much for good intentions.
