Peanutty Chocolate Chunk Cookies

It has come to my attention that my Dessert section of the blog is sadly lacking in one thing.
Cookie recipes.
I aim to correct that fact and I’m starting today with a good ‘un.
That’s “one” for you people not from the southwest.
These are simple and use everyday ingredients you have sitting around your pantry screaming…”USE ME! I’m in need of getting off this shelf!” Except for the chocolate chunks which are readily available anywhere, you’re all set to go with this one!

To start, measure out some wet ingredients – one cup of crunchy peanut butter, 1/2 cup (1 stick) of butter, one teaspoon of vanilla, one egg, and 1/4 cup honey. Even though brown sugar isn’t “wet” measure out one cup and stand by with it (packed).
Then measure out some dry ingredients…one cup of flour, one teaspoon of baking soda, 1/4 teaspoon of salt. Toss them all into the mixing bowl and whisk them up really well. I know one cup of flour seems odd..but just trust me..it’s going to make these cookies moist, soft and gooey.
Now add all your wet ingredients to your mixer bowl ( a different one). Actually add everything but the brown sugar.
Turn your mixer on and mix it until it’s smooth and creamy, about 2-3 minutes.
Now add the brown sugar…
Mix that up again until creamy and sugary.

Then take your mixed up dry ingredients and add half of the bowl into the wet ingredients and mix.
Then add the other half of the dry stuff and mix again…
And now for the glorious marriage of two of my favorite things in the world…add in the chocolate chunks…one entire package.
I would normally fold in chocolate chips with a rubber spatula, but these chunks are hearty enough to stand up to slow mixing.
I use a cookie scoop to make nice even size portions, but you can use a spoon…just look at this…don’t you want a taste right now?
Bake these darlings at 350º for 11-13 minutes. Check them, they should be just browning on top but not too brown! Every oven is different so keep a close eye out.
Cool them down…just a bit.
Cuz they’re really …really good hot and gooey with a cold glass of milk.

This is one that is my Little ones Favorite, course she had to lick the bowl & spoons as ~Not to Waste~.. but she referred this one as her favorite. I didn’t get but maybe 3 cookies out of the whole bunch. Since she put them in her special bowl sharing them with her friends in her room. I only got the bowl back to wash asking that I needed to make more. Well that’s in the future as to be able to eat a bit more.
