Save the Peels!

Last night I was peeling one of those gigantic bags of carrots on account of my daughter being home from college with three friends to feed.  I knew they were lacking in vegetables after last week’s snow storm that hit Tulsa requiring them to order pizza every night.

These girls make me remember how much fun college and college friends are.

Anyway, it occurred to me as I was peeling carrots to make my Balsamic Honey Glazed Roasted Carrots, that it would be a waste to throw away all those peels.

What if you threw them into a freezer bag and kept them for your next batch of chicken or vegetable stock?

I think I’ll do it.
