Grilled Potatoes

This recipe is so easy, it’s almost embarrassing to post.  This is a great last minute side dish to whip up when you’re grilling a steak or even burgers or chicken.  Toss it onto the grill and let it go while you fix the rest of your food.

Take a long rectangle of foil.  Slice up a couple of red potatoes per person.  Slice up a quarter of an onion per person.  Slice up 2-3 cloves of garlic and toss all of these onto the foil.

Sprinkle salt and pepper over the top and dot it with butter. I used about 6 very thin pats of butter.

Cut another equal size piece of foil and put it over top of the whole mess.  Roll up the edges tightly on each of the 4 sides of the foil to make a packet.

Place it on the grill for about 20 minute, flipping it once at the 10 minute mark. 

Check for doneness but be careful of steam!

And scoop it all out onto a serving bowl or platter.

Try experimenting with other additions.  Try adding chopped fresh rosemary,parsley or thyme.  Bacon and cheese are delicious but soooo fattening!

Need a quick side dish for the grill? This is a good one.

  • Yum! I love roasting things in big foil packages. Other veggies can be roasted this way in the oven, too! No cleanup required, either ;)

  • At our house, we call these Cowboy Potatoes, sort of a reference to cooking over an open fire like cowboys used to do. No matter what you call them, they are easy and delicious and you don’t have to turn on the oven!
